I apologize for the corny pickle pun….actually no I don’t….who can help themselves when it comes to a pickle pun? 🤷♀️😂 This The Dill-ightful Grilled Cheese Sandwich is the dream come true for pickle enthusiasts! With all the cheese, all the pickles, and all the flavor, it’s the perfect quick and easy meal for any day, especially during Lent. If you’re craving something savory, this sandwich will definitely hit the spot and leave you wanting more. It’s gooey, tangy, and absolutely mouthwatering—pickle lovers will rejoice!
If you’ve never had dill pickles in a grilled cheese before, you’re seriously missing out. The combination of creamy, melty cheese with the bright, tangy snap of a pickle is honestly next-level. It’s the kind of bite that hits all the right notes—salty, crunchy, cheesy, and just a little unexpected (in the best way). Once you try it, a regular grilled cheese just feels a little… boring.
Another reason to love this sandwich? It’s easy to customize based on whatever you’ve got in the fridge. Stick with a classic cheddar for that sharp, gooey goodness, or mix it up with something like Havarti, Monterey Jack, or even a little Swiss. If you want to get really wild, toss in a few slices of crispy bacon, a swipe of spicy mustard, or a sprinkle of ranch seasoning!
This sandwich isn’t just for lunch. It’s perfect for easy dinners, late-night cravings, or those days when you just need some solid comfort food without making a huge mess in the kitchen. Serve it alongside a bowl of tomato soup, a handful of kettle chips, or even a simple green salad if you’re feeling fancy.
If you’re wondering what type of bread to use, a good sourdough, Texas toast, or even a rustic artisan loaf works best. You want something sturdy enough to hold all that cheesy, pickley goodness without falling apart halfway through.
I HIGHLY recommend shredding your own cheese. It’s fresher, taste better, and no extra coatings. We shred all of our cheese and this Electric Cheese Grater is a LIFE SAVER! Totally worth the investment!
Cooking tip: go low and slow with the heat. Let the sandwich toast slowly so the bread gets that perfect golden-brown crunch while the cheese melts all the way through. Rushing it on high heat might burn the outside before the cheese gets properly melty (and no one wants that).
Whether you’re a hardcore pickle lover or just someone who likes their grilled cheese with a little more character, this Dill-ightful Grilled Cheese is definitely worth a spot in your regular rotation. It’s simple, satisfying, and just a little bit surprising—in the best way possible.

Instructions:
Combine all of the ingredients except for the bread and butter into a bowl.

Spread a layer of your mixture on your bread. Then top it with another slice of bread.

Spread butter on the outside of your sandwich and grill in a skillet on medium heat. We use a lot of cast iron! Many of my cast iron skillets came from my Grandma Alma, I love to think about what she all cooked in them back in the day. You want to cook this low and slow so all the cheesy awesomeness has time to heat through. After the first side is browned to your liking, flip and continue cooking on the other side.

Now your sandwich is ready for you to enjoy!!!
