What is khorasan wheat?!
Khorasan wheat is an ancient, nutrient-dense variety of wheat with larger, golden kernels and a rich, nutty flavor. It is higher in protein, fiber, and certain vitamins and minerals (like magnesium and zinc) than conventional wheat varieties and was grown in ancient civilizations, including Egypt.
Fun fact-King Tut’s tomb contained Khorasan wheat seeds, possibly meant for his journey into the afterlife.
If you are in need of a gluten free option, puffed brown rice would also work great in this recipe and use corn flakes.
Why we love honey!
Every fall we get gallons and gallons of honey from our local family owned bee farm.
Local honey may offer some relief from seasonal allergies because of the trace amounts of local pollen and its natural anti-inflammatory properties. Honey is a more natural and less processed sweetener compared to refined sugars, offering trace amounts of vitamins, minerals, and antioxidants. It has a lower glycemic index, meaning it causes slower blood sugar spikes, which is better for sustained energy and preventing crashes. Honey also contains natural antibacterial and anti-inflammatory properties, making it beneficial for immune health. Certain types of raw honey contain prebiotics that support digestive health.
Ingredients
Khorasan Wheat Puffs- I like to buy the Nature’s Path Organic brand in bulk on amazon!
Corn or Wheat Flakes- I used Nature’s Path Organic Heritage Flakes this time around! The 365 Organic Corn Flakes would be a great gluten free option.
Avocado Oil
Honey- We like to buy local!
Maple Syrup- We like to buy local or this is a great option! (Not pictured, oops!)
Salt- a sea salt or pink Himalayan salt are great options!
Vanilla-Be sure to get pure vanilla, not imitation vanilla. Homemade Vanilla is even better!
Cinnamon
Freeze Dried Blueberries- Readywise is a great bulk option on amazon. I like to crush 1/2 of them for some smaller pieces

Directions
- Preheat oven to 300’F
- Combine honey, maple syrup, oil, salt, cinnamon and vanilla in mixing bowl.
- Add in the wheat puffs and stir to combine.
- Spread on a rimmed baking sheet lined with parchment paper. (Easy clean up!!) I get precut parchment sheets to make it an even faster process.
- Bake for 15-20 minutes stirring every 5 minutes. Remove from oven when it is golden brown. I like to sprinkle a little more cinnamon on top after it comes out of the oven!
- Allow to cool completely and then stir in the freeze dried blueberries and flakes. Serve immediately or store for later use! I like to store in mason jars or reuse other large jars we have around. These mason jar lids are perfect for storage!

- 6 oz Khorasan Wheat Puffs
- 6 cups corn or wheat flakes
- 5 Tbsp honey
- 4 Tbsp maple syrup
- 1 tsp vanilla
- 2 tbsp avocado oil
- 1/4 tsp salt
- 2 tsp cinnamon
- 1.5 cups freeze dried blueberries (I like to crush 1/2 of them for smaller pieces!)
