Quick & Easy Chicken Sheet Pan Meal – Ready in 30 Minutes!
This sweet chili chicken sheet pan meal is one of those meals that I keep coming back to because it just checks all the boxes. It’s a quick healthy meal, it doesn’t leave my kitchen looking like a tornado came through, and—most importantly—everyone in my house actually eats it without complaint. I like to serve this over rice, here is my post about rice choices and how to make long grain rice in the instant pot, it’s so easy!
You can use boneless skinless chicken breast or boneless skinless chicken thighs. I like the chicken thighs because they don’t dry out so quickly. Another great options would be to substitute shrimp, it is delicious with this combination!
Let’s talk about the sweet chili sauce for a second—It’s sweet, a little spicy, and totally addictive. You could probably drizzle this sauce on a piece of cardboard and it’d taste good. 365 by Whole Foods Market, Organic Sweet Chili Sauce is a pretty good option and Date Lady Sweet Chili Sauce is a more expensive option but amazing ingredients! Different sauces have different levels of spice so always be sure to try them out. Other brands can contain some pretty crappy ingredients, so be sure to take a look before purchasing! I usually grab a bottle and keep it in the pantry for nights just like this.
Double the recipe and pack up the leftovers for lunch the next day. The flavors are even better after hanging out in the fridge overnight. It reheats well and doesn’t get weird like some leftover meals can. My kiddos will even pack it in a thermos for there school lunch! Also a great way to use up zucchini that shows up in your mailbox and on your porch from the neighbors during zucchini season.
Also… this is a great “clean out the fridge” meal. You know, the one you throw together when you’ve got half a pepper, a stray onion, and a lonely carrot hanging around. Toss it all in the sweet chili sauce and boom—dinner. Done.

Ingredients
- Boneless Skinless Chicken Breast or Thighs cubed: the thighs definitely don’t dry out as quick but both are great options!
- Diced Yellow Squash: I cut these pretty small since they take a little longer to cook
- Diced Zucchini
- Diced Red Onion
- Diced Sweet Peppers
- Sliced Mushrooms
- Sweet Chili Sauce: 365 by Whole Foods Market, Organic Sweet Chili Sauce is a pretty good option and Date Lady Sweet Chili Sauce is a more expensive option but amazing ingredients! Different sauces have different levels of spice so always be sure to try them out. Other brands can contain some pretty crappy ingredients, so be sure to take a look before purchasing!
- Avocado Oil
- Pepper
- Smoked Paprika– I buy the BIG container from Amazon, we use this on everything! (Doesn’t have to be smoked, but it adds a little something extra if it is!)

Directions
- Preheat the oven to 425’F
- Line a sheet pan with aluminum foil for easier cleanup. Add the chicken, veggies, season with pepper and paprika, evenly drizzle with the olive oil and 1/2-3/4 of the chili sauce depending on the level of heat you are wanting, toss to combine.


- Roast for around 15 minutes-20 minutes, or until chicken is cooked through and vegetables are tender. If desired, drizzle with extra chili sauce, this is a great way to keep a family with varying levels of heat tolerance happy! We like to serve over basmati rice.



Other Veggie Options:
I like to use up whatever veggies are needing to get used up in my fridge! Other veggies that would go great with this would be:
- Broccoli
- Carrots
- Cauliflower
- Brussel Sprouts
- Peas
- Using frozen vegetables isn’t advised, as they will be soggier and water down the sauce more. If you need to use them in a pinch, I would run them under hot water first and try to get as dry as possible!

There are a lot of options for subbing out the chicken breast!
- Boneless Skinless Chicken Thighs
- Shrimp
- Kielbasa
- Could also make this with just the veggies as a side dish!

Sweet Chili Chicken Sheet Pan Meal
This easy sheet pan meal features juicy chicken, colorful vegetables, and a sweet chili sauce glaze. Minimal prep, quick cleanup, and full of flavor — perfect for busy weeknights or meal prep.
Ingredients
- 2 lbs boneless skinless chicken breast or thighs-cubed
- 1 yellow squash cut into cubes
- 1 zucchini cut into cubes
- 8 oz sliced mushrooms
- 1/2 red onion-diced
- 1 sweet pepper-diced
- 10 oz sweet chili sauce
- 1/2 tsp black pepper
- 1 tsp smoked paprika (regular paprika is fine too!)
- 3 tbsp avocado oil
