The Ultimate Egg Sandwich: Brioche Bun Meets Spicy Sriracha Mayo
If you’re looking for the perfect hangover cure or just a sandwich that’s equal parts comforting and packed with flavor, this one’s for you. Picture this: a fluffy, buttery brioche bun, perfectly cooked eggs, and a generous spread of sriracha mayo that adds just the right amount of heat to wake up your taste buds. It’s the kind of sandwich that will revive you after a long night and leave you craving more—whether it’s breakfast, lunch, or that post-party recovery snack.

Ingredients
Eggs
Sriracha-another favorite hot sauce can be used! Keep in mind the level of spice
Cheddar Cheese Slices
Cooked Bacon (I like to use nitrate free!)
Brioche Buns (These pop up often on The Good Stuff Bake Shop‘s menu!)
Salt and Pepper
Mayonnaise- Chosen Brand is a good clean brand or homemade is always good too!
Spinach or other greens-OPTIONAL, but it does help me convince myself I’m getting my veggies in lol
Smoked Paprika- regular is fine too!
Butter for toasting buns and to fry eggs in
Instructions
- Prepare sriracha mayo. In a small bowl, mix together sriracha, smoked paprika and mayonnaise. If you’re feeling SPICY today, add a little more sriracha!
- Toast the brioche buns, by buttering them up and placing cut side down in a skillet. Remove when browned.
- In the same pan, crack the eggs and cook them to your liking. For 4 sandwiches you will need 8 eggs total. I also cooked my bacon in this pan, so I fried my eggs in the bacon grease. (YUM!) Otherwise you will need to add some butter. We like using cast iron pans because they increase your iron intake and we avoid nonstick. PLUS, this was my Grandma Alma’s skillet, how cool is that? For a classic fried egg, cook for about 2-3 minutes on one side, then flip and cook for another minute or so for a runny yolk, or longer for a fully cooked egg. We like ours runny, so when you bite into the sandwich it all just mixes together, but you do you! Season with salt and pepper.
- To assemble, spread a generous amount of sriracha mayo on both halves of the brioche bun. Starting from the bottom bun up, add cheese, egg, some extra sriracha on top of the egg if you’re feeling more heat, egg #2, bacon, spinach, another slice of cheese and top bun. Whew! You just built an amazing egg sandwich! You’ve got a delicious sandwich, hangover cure or a midday pick-me-up in your hands!

- 2-3 tsp sriracha sauce
- 2 tsp smoked paprika
- 1/2 cup mayonnaise
- Spinach or other greens to top sandwich (optional)
- 5-6 tbsp butter
- Salt and Pepper to taste
