  • boneless skinless chicken breast or thighs: sliced thin- see below for notes about slicing against the grain!
  • avocado oil
  • taco seasoning: Siete is a great option with great ingredients or make your own!
  • smoked paprika
  • black beans: drained and rinsed until the water runs clear
  • bell peppers: sliced or diced
  • onion: sliced or diced
  • jalapeños: sliced or diced
  • Foil: for wrapping, I don’t LOVE cooking with aluminum, but until I find a better product to make campfire packets out of, this is what I’ll continue to use. Luckily this isn’t something we eat everyday!

Step 1: Prep the goods
If your chicken isn’t sliced yet, do that first. Toss it into a bowl with avocado oil, peppers, onions, jalapeños, taco seasoning, and smoked paprika. Give it a little massage like it’s had a long day—get that flavor in there.

Tear off large pieces of foil (you’ll want room to fold them over). Add 1 to 2 cups of the chicken mixture, top with desired amount of black beans. You can make these individual packets or 1 big family packet.

Bring the long sides of the foil together and fold them down a few times to seal. Then fold in the ends so no juices escape. You’re going for a sealed envelope, not a loose burrito.

How to Cook Foil Packets Over the Campfire (Without Burning Dinner)

Cooking foil packets over the fire is one of those camping tricks that sounds foolproof… until your dinner ends up scorched on one side and raw on the other. Ask me how I know.

Here’s how to get it right:

1. Skip the flames- go for the coals.
Place your foil packets on hot coals, not directly in the fire. Flames are unpredictable and way too hot. Coals give you even, steady heat — kind of like nature’s oven.

2. Double up your foil.
Use heavy-duty foil, or double layer it if you’re not sure. This helps prevent tearing and keeps your dinner from becoming part of the campfire.

3. Flip halfway through.
Just like grilling, flipping your packets helps everything cook evenly. About halfway through, use tongs to turn them over.

4. Don’t overstuff.
Too much food = uneven cooking. Keep the packets around 1.5 inches thick so the heat can actually reach the center.

5. Check for steam.
When your packet starts to puff up and you hear it sizzling inside, you’re getting close. Carefully open one (watch for steam!) to check doneness — especially the chicken.

These chicken fajita foil packets are a simple, make-ahead meal packed with seasoned chicken, peppers, and onions. Perfect for camping, grilling, or busy weeknights- minimal prep, easy cleanup, and full of flavor.

Ingredients

  • 2-3 boneless, skinless chicken breastsor thighs thinly sliced
  • 1 sweet bell pepper sliced or chopped
  • 1 onion sliced or chopped
  • 1 jalapeno sliced (optional)
  • 2 tablespoons avocado oil
  • 1 can black beans drained & rinsed
  • 2 tbsp taco seasoning
  • 1 tbsp smoked paprika

Instructions

  1. Combine chicken, both peppers, onion, jalapenos, oil and seasonings.
