So Simple! Crockpot “Baked” Potatoes…more of a hack?

We are entering the chaos of baseball season, crockpot baked potatoes could be your new best friend. This isn’t some fancy recipe, it’s a honestly more of a hack. Pop your potatoes in the crockpot, forget about ’em, and a few hours later you’ve got the perfect spuds.

It’s great for those days when your family is in and out of the house like it’s a revolving door. Need a quick side dish? Done. Want to turn those potatoes into a full meal? Go wild—leftover Philly cheesesteak? Toss it on top. Buffalo chicken from last night? Heck yes. Bacon and cheese? Always a classic. So, when you’re juggling practices, snacks, and the madness of the season, let the crockpot do the heavy lifting while you focus on…well, anything else.

These would be an excellent side dish for these Easy Crispy Baked Chicken Legs , or run 2 crockpots and make the Crockpot Ground Beef Philly Fix and your meal is ready and warm for all the different shifts of kids coming and leaving!

If you’re feeling fancy cut them in a zig zag, it makes the perfect little caverns for your butter to melt into….and you can tell your toddler it’s a dinosaur egg. And then when you smash it, it looks like a flower…kind of. 😂 #nailedit

Ingredients

  • potatoes

  • avocado oil or olive oil

  • salt

  • pepper

  • Pretty basic ingredients list, but my website is still telling me I need it!

Directions

  • Scrub your baked potatoes and poke with a fork.

    I like to keep a scrub brush for vegetables on a hook inside my cabinet door, so it doesn’t get used for anything BUT scrubbing vegetable…because….ewww. Full disclosure, my kids broke off the hook, I should throw another one, but hangin it on what’s left of the hook works and sometimes that’s just real life. lol. FullER disclosure, here is a link to my favorite veggie brush and it’s NOT the one in the picture. Frankly the one in the picture just sucks, the bristles are falling out and its not course enough, but now I’m stuck with it until it dies-yes I have buyers remorse over a vegetable brush. 😂
  • Rub with oil, salt & pepper.
  • Place in slow cooker and cook until fork tender and then switch to warm. You can fill it fuller than this. I usually put as many potatoes that will fit while still putting the lid on. The cooking time for baked potatoes in the crockpot depends on their size. I usually go for around 3 hours on high, or 6 to 8 hours on low, but it’s always best to check them with a fork. When they’re nice and tender, they’re good to go! If you like your skin a little crispier, just throw them under the broiler or on the grill for a few minutes.
