Pasta seems simple and a lot of boxed pasta at the store looks like it has a short ingredient list… until you dig a little deeper.

A lot of conventional pasta in the U.S. is made with heavily processed flour, “enriched” with synthetic vitamins that were stripped out during processing. Basically, it’s like taking out “the good stuff” and adding fake versions back in.

Unenriched pasta-especially the kind made in Italy-is typically crafted from high-quality durum wheat. Even better when it’s slow-dried the traditional way, which helps preserve nutrients and makes it easier to digest. That’s why so many people who can’t tolerate pasta in the U.S. find they can enjoy it just fine while traveling in Europe.
